Valentino
Valentino is one of the few high class restaurants that has the ability to survive in some of the mosst thriving cities that include Santa Monica, CA and Las Vegas, NV. Piero Salvaggio knows what the people want and for thirty-five years he has been able to deliver it.
The ambience is casual and yet elegant at the same time. There are four downstairs dining rooms and a wine cellar on the upstairs floor – which is home to more than 140,000 bottles that have come from all over the world.
To harmonize with local tastes, young Italian chef Giacomo Pettinari is flanked in the kitchen by Japanese “crudo” chef Taku Tabuchi, who also trained in Italy. Start with the trio of sashimi composed with yellowtail, tuna and salmon with Italian essence; the lobster salad in ricotta-basil sauce, vanilla oil and a gnocchi fritti; the classic caprese salad; or wild mushrooms with Reggiano Parmesan and saffron.
They have several different types of meat dishes to choose from that include braised shanks, veal chop, pan-roasted quail, free-range chicken, and pork filet.
